Monday Blues - Vegan Smoothie Bowl

Mondays are my favourite day of the week, they're sort of like a mini New Years Day but instead of waiting the whole year for them to come round, you get the joy of experiencing them every week!



In celebration of this Monday I decided to create something as bright and exciting as I felt, I was a little short of time so the toppings weren't as elaborate as I would have liked but hey, quick and delicious is still a win in my book!

Life is busy, I struggle some days to fit everything in and in the past my diet was one of the first things to suffer, until I bought myself an Optimum Blender from Froothie. From the day it arrived 3 years ago I began throwing things in to create new soups and smoothies to satisfy my every need. So many years on and I am still just as excited to see what I am going to come up with each day!


Monday Blues Smoothie Bowl

Ingredients

300ml Coconut Water

1 Heaped Tablespoon of Natural Amazonia Raw Vegan Protein Isolate Powder

1 Apple, cored and seeds removed

1 Frozen banana

1/2 Cup of Fresh or Frozen Blueberries

2 Tablespoons of Shreded Cocount

Blueberries, Pepitas and Shreaded Coconut to decorate


Method

  1. Add the coconut water to your blender followed by the various powders listed. At this point you can also add in any of your fave smoothie super powders, I use Vitamin C for an added boost in the winter months.

  2. Blend for 10 seconds

  3. Add the apple and frozen banana. Blend until smooth.

  4. In your smoothie bowl add the shredded coconut and blueberries. Pour the smoothie mix over the top but dont mix!

  5. Decorate as desired using the additional blueberries, coconut and pepitas or whatever else you have around.

  6. Sit, stir and enjoy the delicouness!
